Spring is beginning to creep up on us as the days are getting longer and warmer and everyone is beginning to spend more and more time outside. You could be planning a garden party bridal shower, looking for the perfect signature cocktail for your outdoor wedding reception or simply enjoying a lazy afternoon in the sun. Here are some deliciously bright and bubbly spring cocktails that are sure to refresh you in the afternoon and warm you in the still cool evenings.GRAPEFRUIT CARDAMOM GIN FIZZ
The warm flavors of cardamom infused gin and tart refreshing grapefruit are balanced by subtle rosemary and irresistible bubbles. This is the ideal cocktail for those chilly spring nights.
INFUSED GIN & ROSEMARY SYRUP:
1 cup gin
6 cardamom pods
1 cup sugar
1 cup water
2 rosemary sprigs
2 oz rosemary syrup
3 oz infused gin
1/2 cup grapefruit juice
In a small jar with airtight lid, add gin and cardamom pods. Seal and store 24 hours. In a small saucepan, bring sugar, water and rosemary sprigs to a boil and simmer until syrup is dissolved. Remove from heat and allow to cool completely. Remove rosemary and use right away, or store in airtight container in refrigerator for up to a week.
To make the cocktail, add rosemary syrup, infused gin and grapefruit juice over ice in cocktail mixer and stir. Using a strainer, divide mix into two parts and pour directly into glasses filled with ice. Top with prosecco and garnish with a sprig of rosemary and grapefruit peel.
Light and fruity made with fresh ripe strawberries, you can blend this drink or pour over ice.
4 cups giant fresh strawberries
2 cups champagne
1 bottle sparkling lemonade
In blender, combine strawberries and champagne. Blend until smooth. Divide strawberry mixture between four glasses. Top with sparkling lemonade and garnish with fresh strawberry slices. Option: use frozen strawberries for a more icy cocktail.

2 tbs dried lavender + fresh for garnish
1 lemon, for juice and zest
1 cup sugar
1 cup water
sparkling rose brut
Combine 2 tbs. dried lavender, 2 tbs. lemon zest, 1 cup sugar and 1 cup water in a pot. Bring to a boil and let simmer 5 minutes. Strain syrup and let cool.
Mix juice from half of lemon with 2 oz cold syrup in a shaker. Add ice and shake, then strain. Top with 6-8 oz sparkling rose. Garnish with fresh lavender stem.

juice 1/2 medium blood orange
juice 1/2 lime
1 oz vodka
8 fresh mint leaves
2 oz ginger beer
Combine blood orange, lime and vodka and stir well. Mix in ginger beer. Top with champagne. Garnish with blood orange slices and fresh mint leaves.
